Wolke's enlightening and entertaining What Einstein Told His Cook offers answers to these and 127 other questions about everyday kitchen phenomena. Using humor (dubious puns included), Wolke, a bona fide chemistry professor and syndicated Washington Post columnist, has found a way to make his explanations clear and accessible to all: in short, fun. For example, to a query about why cookbooks advise against inserting meat thermometers so that they touch a bone, Wolke says, "I hate warnings without explanations, don't you? Whenever I see an 'open other end' warning on a box, I open the wrong end just to see what will happen. I'm still alive." But he always finally gets down to brass tacks: as most heat transfer in meat is due to its water content, areas around bone remain relatively cool and thus unreliable for gauging overall meat temperature.

Interspersed throughout Wolke's accessible and humorous answers to these and other mysteries are recipes demonstrating scientific principles. There is gravy that avoids lumps and grease; Portuguese Poached Meringue that demonstrates cream of tartar at work; and juicy Salt-Seared Burgers. Wolke is good at demystifying advertisers' half-truths, showing, for example, that sea salt is not necessarily better than regular salt for those watching sodium intake. While the book isn't encyclopedic, Wolke's topics run the gamut: one chapter tackles Those Mysterious Microwaves; elsewhere readers learn about the burning of alcohol and are privy to a rant on the U.S. measuring system. Sometimes the tone is hokey (The green color [in potatoes] is Mother Nature's Mr. Yuk sticker, warning us of poison) and parenthetical Techspeak explanations may seem condescending to those who remember high school science. Those who follow Wolke's "Food 101" newspaper column know him for his thorough scientific answers to questions about everyday food science. What Einstein Told His Cook is a compilation of these popular columns. Wolke covers such basic questions as how cookware conducts heat, how water filters do their job, and how coffee is decaffeinated. He sets up controlled experiments to test how to extract maximum juice from citrus fruits. He addresses controversies such as the irradiation of foods. Recipes supplement and illustrate the scientific principles. Wolke writes about these serious topics with a good sense of humor that doesn't belittle the seriousness of his purpose. Mark Knoblauch

Allows one to use plastic spoons for caviar, etc.

This is a most delightful book, full of kitchen wisdom and chemistry, good and bad puns, and many, many clever witticisms. It is a flat out pleasure to read, but what really makes it such an outstanding piece of work, and a book every kitchen should have, is that it is so full of information, from why and how corn syrup ends up in sodas to why and how to wash your mushrooms--and yes, they are indeed grown in manure, but not to worry, as Wolke explains on pages 286-288 in a little essay entitled, "You Can't Wash Your Car with a Wet Mushroom." (I believe that.) This is the kind of book you'll find yourself reading from cover to cover instead of peeling the potatoes. Speaking of which, Wolke advises that there is a very slight problem with green potatoes, but that reports of their poisonous nature are greatly exaggerated. (See pages 117-120 for the true scoop.)

I have just one problem: nowhere does Wolke say how many sesame seeds are in a teaspoon. However, inspired by Wolke's labor-intensive lime squeezing experiment on pages 281-284, I was able to work it out myself. The answer is 840. I found this by counting the number in a half teaspoon and multiplying by two, genius that I am. (Alas, this was before I realized that I could have counted the number in a quarter teaspoon and multiplied by four.) Which reminds me of the joke about a guy on a train counting cows in a field. When asked how he could do this he explained that he counted their legs and divided by four.

Now you may think this was an idle exercise and wonder if I am not slyly making fun of Wolke's book. Au Cointreau! What I learned by counting sesame seeds exemplifies one of the lessons in the book, namely how hard it is to measure anything exactly. On page 294 Wolke asks, "Have you noticed how surface tension makes the liquid bulge up above the rim of the measuring spoon? How accurate can that be?" Well, I have, and I want to tell you getting a straight line of sesame seeds across the top of that measuring spoon was no piece of cake either!

There are nine chapters and a really excellent index, suggestions for further reading and a brief glossary. There are some excellent recipes by Wolke's wife, Marlene Parrish. I performed a "thought experiment" on several of them and found that my mouth was watering. One of them, how to make turkey or chicken gravy on page 156 is almost exactly the way I make it. (Smile.) Parrish uses the roasting pan, transferring it to the stove top burners after removing the bird, and then deglazes the pan more or less in the French style. I must note that on the previous page Wolke himself does not recommend this technique finding it "hard to straddle two burners" not to mention "one big cleanup job after dinner."

Which makes me wonder who makes the gravy in their household--or, better yet, who does the dishes!

The chapters begin with sugar, "Sweet Talk" and end with "Tools and Technology." Wolke gives us a full mouthful on the differences between cane and beet sugar, between brown and white sugar, between cocoa and chocolate, and makes me feel good about not being crazy about white chocolate. He separates the sea salt from the rock salt; he explains what MSG is and where it comes from; how home water filters works; why "the nearer the bone, the sweeter the meat" is actually true, and of course how to open a champagne bottle and clarify butter... Ghee, I'm exhausted!

One of my favorite explanations is why beef in the supermarket looks bright pink on the outside and brown on the inside. (See pages 127-128, and, no, they don't spray it with dye, which is what I always thought.) I also liked it when Wolke got down and dirty and tried to fry an egg on the sidewalk, and after some heavy-duty "Techspeak" came to the conclusion that you can't; that frying an egg on the sidewalk is an urban legend. (But try the roof of your Arizona "sun-baked, dark blue, 1994 Ford Taurus" which "measured 178 degrees F, more than hot enough to coagulate both white and yolk.") (p. 193)

The icing on the cake for me (if you will) was Wolke's explanation of "Why Crackers Are Holey" beginning on page 307. What his explanation amounts to is a guide on how to make crackers, which is something I've been stumbling around in the kitchen, trying to do off and on for ages. Two key factors that I was unaware of: One, the oven has to be very, very hot ("saltines are baked at 650 to 700 degrees F."; matzos at "800 to 900 degrees F.") and Two, crackers need holes to let the air out! Try reading this page through a steak."

Or, "The makers of matzos, the unleavened flatbread of the Jewish Passover, seem to have gone hog wild (you should excuse the expression) on perforations. Matzos are much hole-ier than secular crackers." (p. 307)

What Mr. Wizard asked his cook.

I might have liked this book better if I read it before I read On Food and Cooking: The Science and Lore of the Kitchen by Harold McGee. But I read that one first and enjoyed the technical explanations. Some of the same questions are explored in both books, and in McGee's book you will get a detailed explanation suitable for a college student. This book you will get an explanation suitable for about 7th grade. It's more like Mr. Wizard or Bill Nye asked these questions instead of Einstein. If you want easier reading and simple answers, this book is for you. But I felt it was dumbed down compared to McGee's book.

Answers to questions I didn't even know I had...

Excellent writing! I used to love the sciences growing up but now I've entered the "real world" complete with a sit-all-day-looking-at-a-computer-screen job. Because of that, I have recently found cooking (something to invigorate my mind and senses in the evening). Wolke's book is the perfect combination of both cooking and science, with just the right amount of humor and sarcasm. I just finished it last night and am already online to buy his other works. Happy reading!

Grade 4-8-Jack keeps a journal for his teacher, a charming, spare free-verse monologue that begins: "I don't want to/because boys/don't write poetry./Girls do." But his curiosity grows quickly as Miss Stretchberry feeds the class a varied menu of intriguing poems starting with William Carlos Williams's "The Red Wheelbarrow," which confuses Jack at first. Gradually, he begins to see connections between his personal experiences and the poetry of William Blake, Robert Frost, and others, and Creech's compellingly simple plot about love and loss begins to emerge. Jack is timid about the first poems he writes, but with the obvious encouragement and prodding of his masterful teacher, he gains the courage to claim them as his own in the classroom displays. When he is introduced to "Love That Boy" by Walter Dean Myers, he makes an exuberant leap of understanding. "MARCH 14/That was the best best BEST/poem/you read yesterday/by Mr. Walter Dean Myers/the best best BEST/poem/ever./I am sorry/I took the book home/without asking./I only got/one spot/on it./That's why/the page is torn./I tried to get/the spot/out." The book Love That Dog is about Jack, Sky, and poetry. Jack likes the short poems the best, and so do I. Jack loves his dog named Sky. [Spoiler alert] I don’t like it when Sky never wakes up again because it makes me feel sad. Sky is cute, yellow, and drools a lot. That’s the part I like the most. I am 7 years old. I would recommend this book to 6 year old kids and older.

This book is about a little boy named Jack. He learns to read and write poems at school but thinks they are for girls not boys. After reading some poems he starts to like poetry and writes a poem about his yellow dog.
I am 8 years old and I liked this book. It was easy to read. I liked it because it is emotional and funny at the same time. Any age can read this book.

The book Love That Dog is full of poems. It’s a really good book. Jack is a boy. He talked about his yellow dog named Sky. [Spoiler Alert] Sky was run over by a blue, muddy car. It makes me sad a little. I like this book because Jack’s yellow dog is cute. I also like how he did his poem that was shaped like Sky. It’s a medium sized book. I am 9 and I’d highly recommend this book to 1st grade students and up.

BEST KID'S BOOK EVER

My child came home from school completely enamored by this book. When I read it with him, I was hooked as well. I'm not a professional reviewer like so many others here, but I am a mom who has read countless books with her kids. And this one is outstanding. What I love about this book is that it covertly introduces poetry to kids. And it hooks them by introducing them to what I'm going to call "mind benders" like "The Red Wheelbarrow." It's also written like a response journal. I'm so thrilled that the dots are not connected here, that you have to think and infer and create the missing parts of the narrative. I also love that it introduces poetry to kids in a non-threatening way. (The main character doesn't understand some poems and writes "honestly" about that in his journal.) I found my child completely agreeing -- what DOES the poem about the red wheelbarrow and the white chickens mean??? The author brilliantly includes the poems she references (the back of the book) so you can read them while/after reading the book itself. I cannot say enough great things about this book.

Stretch for the Stars

This book, told entirely in free verse, from the point of view of a grade-school boy named Jack, is on the surface about how his teacher, Miss Stretchberry, introduces the whole class to poetry and asks them to write a poem. Each day, it seems. Jack resists, at first saying that poetry is for girls, not boys. Jack's voice is wonderful: he asks, he questions, he points out contradictions, and, slowly, he reveals his feelings. All in wonderful, simple yet deep free verse. When the class is asked to write a poem about a pet they've had, Jack resists writing about his dog. It's too painful. But slowly, through poetry, he reveals how much he loved his dog and what happened to it. And doing so helps Jack cope with his loss.

This is a book to be read and enjoyed again and again: you'll see and appreciate different things with each reading. And, you will especially appreciate teachers who introduce children to poetry.

About the Author
Cyrus Todiwala was born in Bombay and has lived in England for over twenty years. As well as running three successful restaurants, he has written a number of cookery books. A passionate campaigner for sustainability and British produce, Cyrus was awarded an MBE and an OBE, is a deputy lieutenant of Greater London, and cooked for the Queen on her Diamond Jubilee Tour in 2012. Tony Singh was born in Leith, and has held positions on the Royal Yacht Britannia and at the Balmoral Hotel, as well as running a string of award-winning restaurants in Edinburgh. A winner of the Scottish Chefs’ Award for Scottish Chef of the Year, Tony also oversees several pop-up restaurants and a cookery school. He has a passion for combining British ingredients with flavors influenced by his Sikh upbringing.

We ate at Mr Todiwala's new Heathrow restaurant on our way back from Europe last year. That was a
superb experience - you might want a London layover just to catch his cooking. His book promises even more - it is witty, graceful and fresh with sparky twists on old favorites. In a crowded field this is a standout

Spicing up Britain

I am glad I bought this book before we saw the BBC TV programme which made the dialogue almost incomprehensible with clashing music! Cyrus Todiwala and Tony Singh make a real contribution to the all-too-often boring British diet by sensitively adding Indian spices to otherwise bland standard dishes. As an example, inovatively including a touch of chilli and cardamom to ice-cream. Similarly other spicey additions are made to time-honoured standards and also common vegetables and meats are made much more more interesting with spices.
The book has been written with a sense of humour while at the same time confirming the authors`commitment to being British in our increasingly polyglot society.
And so back to preparing their beetroot soup recipe for today's lunch.

About the Author

Aaron T. Woland, CCIE No. 20113, is a principal engineer within Cisco’s technical marketing organization and works with Cisco’s largest customers all over the world. His primary job responsibilities include secure access and identity deployments with ISE,

solution enhancements, standards development, and futures. Aaron joined Cisco in 2005 and is currently a member of numerous security advisory boards and standards body working groups. Prior to joining Cisco, Aaron spent 12 years as a consultant and technical trainer. His areas of expertise include network and host security architecture and implementation, regulatory compliance, virtualization, as well as route-switch and wireless. Technology is certainly his passion, and Aaron currently has two patents in pending status with the United States Patent and Trade Office. Aaron is the author of the Cisco ISE for BYOD and Secure Unified Access book (Cisco Press) and many published whitepapers and design guides. Kevin Redmon is the youngest of 12 siblings and was born in Marion, Ohio. Since joining Cisco in October 2000, Kevin has worked closely with several Cisco design organizations; as a firewall/VPN customer support engineer with the Cisco Technical Assistant Center; as a systems test engineer in BYOD Smart Solutions Group; and now as a systems test engineer in the IoT Vertical Solutions Group in RTP, NC with a focus on the connected transportation systems. Besides co-authoring this book with Aaron Woland, Kevin is also the author of the Cisco Press Video Series titled Cisco Bring Your Own Device (BYOD) Networking LiveLessons. He has a bachelor of science in computer engineering from Case Western Reserve University and a master of science in information security from East Carolina University, as well as several Cisco certifications. Kevin enjoys presenting on network security-related topics and Cisco’s latest solutions. He has presented several times at Cisco Live, focusing on network security-related topics and has achieved the honor of Distinguished Speaker. Kevin enjoys innovating new ideas to keep his mind fresh and currently has a patent listed with the United States Patent and Trade Office. He spends his free time relaxing with his wife, Sonya, and little girl, Melody, in Durham, North Carolina.

Best Cisco Certification Book I've read!

I am already CCNA (2 books), CCNP R&S (4 books), CCDA (1 book), CCDP (1 book) and CCNA Security (1 book) certified. The reason why I'm bringing this number is because CCNP Sec SISAS 300-208 was the best Cisco Cert book I've read!

#1 - it is fun... the book is very engaging and the flow of the reading is reeeeeeally smooth!
#2 - fun is not enough! The CONTENT of the book is really easy to understand, yet crucial for passing the Cert.

I've passed my exam today and basically all I used was the book with a Lab (ISE 1.2 + 3560-E switch + PC) to practice.

This will cover most of what's on the exam

This covers about 85% of what the certification exam covers. There are other Cisco products that this book does not reference or cover that are on the exam. In fairness to the author, some of these other things aren't listed on the exam topics either.

This book is great - covers all the topics needed for the exam, I like how Aaron throws in some jabs and jokes in the book, if you like security topics then this will keep you going. Took the exam today and did very well main study source was this book and some prior experience with ISE, lots of good stuff in this book!

Eliezer Yudkowsky is the author of Harry Potter and the Methods of Rationality, the most-reviewed Harry Potter fanfiction on the entire internet as of 2015. He's a decision theorist who has done some work on theories of reflective probability, and is unable to prevent this from infecting even his most frivolous writing. He considered trying to pass off this book as the anonymous Internet translation of a Japanese light novel that mysteriously nobody would be able to find, but gave upon the idea after he realized that this work was going to be very clearly traceable to him.

Ridiculously funny and over-the-top. At times somewhat explicit. Ends too suddenly. Still well worth reading.Kept laughing out!

Without giving away too much of the plot, let's just say that the author picks a couple of main characters, settings, and concepts that are familiar from popular culture, mythology, or literature. He then simplifies them all the way down to the most essential set of rules. And then proceeds to string these rules together in the most logically consistent, but absolutely ridiculous sequence of events.

The story at times gets a little sexually explicit. By definition not any worse than what would commonly be encountered on the internet, but that's not exactly saying much. The adult content is an integral part of the story though. So, a mature reader is unlikely to be bothered, and a lot more likely to laugh out loud considering the sheer ridiculousness of the plot -- a younger reader might not get the references and could be confused or disturbed.

Overall, the plots twists are highly entertaining and there are enough curve balls that I enjoyed reading each and every one of the short chapters. The downside to this style of writing is that it only works well, if the characters are static. Any amount of character development would break the illusion of a twisty, but logically inevitable plot development. Similarly, once the plot has run its course, it is difficult to continue the story without breaking the spell. And since so much depends on surprising turns in the plot, I am not sure I would read the story more than once nor enjoy it after reading spoilers.

Consequently, not only is the book rather short, it also ends quite abruptly. In a way, the sudden ending makes the story feel like a highly amusing first chapter of a longer work. This longer work, if it existed, would continue telling a story in the same universe, but not necessarily using the same over-the-top plot devices and flat characters. As is, I am a little torn between enjoying the hour of entertainment that I got form this purchase and feeling let down because it ended so suddenly. I would happily pay for a book that extended our view of this particular universe.

Not Safe for Work.

First, Yudkowsky's new story is sick and wrong (but not in an explicit or graphic way, don't worry). Second, it is so unspeakably and weirdly clever it will break your brain. And really, don't read this at work; your insane laughter will certainly be noticed.

After a bit of cringe on my part at the beginning, I don't think I stopped laughing the entire way through.

If you've ever spent time reading s***ty light novel translations, Yudkowski created a pitch-perfect parody practically all the way through, with the occasional exception of a too well-constructed paragraph.
